I am the worst. I apologize it's been over a month, and I have been seriously lacking motivation and also my culinary adventures consist of cereal, and lots of it.
So since my diet has not consisted of me cooking very much I'm going to post an old favorite of mine. It's my go-to for quick and easy, and it's definitely a comfort food for me.
Peanut Butter Noodles!
Okay, I know how filthy that probably sounds, but surprisingly so delicious!
Vermicelli Rice Noodles
All Natural Peanut Butter (the Kraft kind comes in a brown container)
Chili Sauce- I use
1. Start off my taking some lightly simmering water off the stove and soaking your rice noodles in it OFF THE HEAT. They'll take anywhere from 4-8 minutes to soften up, but don't leave them too long or they'll get all gummy and gross.
2. Next, steam off your favorite vegetable, I use broccoli most of the time but I've used Asparagus a couple times and it's really a whatever-you-have kind of deal, just make sure it's not too overcooked.
3.In a wok or frying pan toast up some sesame seeds and peanuts on medium heat.
4. Add a good spoonful of peanut butter to the pan and let it melt down. Then add a generous drizzle of chili sauce, the more the better if you're like me =)
4. Next toss the strained noodles to coat them evenly with the sauce, and finally toss in the steamed veg and a few slice green onions.
I normally then dump them into a bowl and eat with chopsticks, but I'm sure a fork works fine too. I'm the biggest weirdo when it comes to chopsticks and I'm not sure how I do it, but I manage to get all the food in my mouth but I'm definitely not using them correctly.

So I'm going to try realllllly hard to keep regular updates coming, I may have to lock myself in the kitchen and start using up the contents of my cupboards for inspiration, but I'll do what I have to do.
